Raw Zucchini Sushi RollsFrom For the Love of Food
4 servings
1/2 cup cashews, soaked overnight
1 Tablespoon rice vinegar
3 - 4 zucchini (each yields 6 - 8 slices)
2 carrots, sliced into matchsticks
1 cucumber, seeds removed and sliced into matchsticks
4 medium radishes, sliced
1 avocado, peeled and sliced
1 small bunch cilantro
Drain cashews and put into food processor with rice vinegar. (Depending on how long cashews were soaked you might need to add a tablespoon of water to get the right consistency.) Process, scraping sides with spatula if necessary, until cashews are a soft paste but still have some texture.
Chop the ends off of your zucchini and use a vegetable peeler to peel your zucchini into long thin strips. Lay zucchini strip flat and add a small spoonful of cashew mixture onto one of the ends of zucchini. Add a few matchsticks of veggies, avocado, and a couple of pieces of cilantro. Roll up and enjoy!ohmygod this is so pretty im gonna try it tomorrow

Mango Jam
900 g ripe mangoes
300 g white sugar
180 ml water
Thermometer or 250 ml cold water, in a glass
1. Chop and mash the mangoes.
2. Dissolve sugar and 180 ml of water into a large saucepan over med-low heat. Bring to a boil, and increase heat to medium.
3. When the sugar reaches 270F, add the mango and continue boiling until thick, about 5 minutes. (If you do not have a thermometer, use a spoon to carefully drop a small amount of the sugar and water mixture into your glass of cold water, if it creates a thin strand as it drops to the bottom, it’s hot enough!)
4. Let cool in the sauce pan before transferring to jars.

Red Velvet Pancakes
Ingredients:
- 1/2 cup egg whites
- 1 banana
- 1.5 tbsp cocoa powder
- 1/4 cup plain greek yogurt
- 1 cup oats
- 1 tbsp flaxseed
- 1 tbsp wheat germ
- 1 tsp vanilla
- 2 tsp espresso powder
- 1 tbsp stevia
- 2 tsp baking powder
- 1/4 cup water (roughly)
Mix all ingredients in a blender until the consistency is smooth. Cook on a non-stick pan with some olive oil.
Makes 8 pancakes, each having 75 calories, 1 g fat, 3 g sugar, and 5 g protein.

What I ate today:
Breakfast: Mean green juice with strawberries, blackberries, half a banana, and chia seeds.
Post Workout: Protein shake with edamame and chickpeas.
Lunch: Huge salad full of head lettuce, cucumber, celery, mushrooms, onions, grape tomatoes, and hemp seeds with balsamic vinaigrette dressing. Also a spinach smoothie with hemp protein powder.
Afternoon Snack: Grapes and a gala apple.
Dinner: Asparagus, broccoli, corn, carrots, and a little bit of pineapple for dessert. I had another protein shake as well.

Yep. Thats healthy eating for you
I’m sick of all of the people who make fun of my healthy lifestyle and eating choices. As many vegans/vegetarians will know, people can be very critical when it comes to diet choices, often feeling threatened and criticising every aspect. If its not “Ew your food is gross” or “What do you eat? GRASS”
First of all, it is my choice what I choose to eat. And no, with meals like this everyday I don’t “crave a cheeseburger”, nor am I ‘starving’ or ‘depriving’ myself. I simply choose to nourish my body with delicious whole foods, and you know what? It’s great! My skin is glowing, I’m alive and full of energy and I feel absolutely wonderful!
So go ahead- picking faults with my eating habits, calling me ‘obsessive’ and snickering while I enjoy my salad. But don’t think for a moment that you can bring me down with your negative, judgemental comments.
